I did a couple of test videos myself, and without seeing what Ken has for settings on Fraps, part of his problem is the fact that he is running FSX in windowed mode. Fullscreen is much smoother.  Also, shoot videos using half size, not full.  If you're adding music, turn sound off, and hide the mouse cursor.
