Windows 7 versions?

Well, not really related to FSDT.  However, I've gotten a lot of good help from everyone on these forums and figured I'd try with this one.  I'm building an all new computer...one I expect will actually run FSX well (not everything to the right, but getting there).  My current computer does an admireable job, but just isn't cutting it (OOM after about 2.5 hours).  The new system will be:

Intel i7-920 (plans to overclock to 3.6ish GHz)
Asus P6X58D Premium Motherboard
Corsair XMS3 3x2GB 1333 RAM
?GTX 275/895MB or GTX 285/1GB (still deciding)
Corsair 750W PSU
2xDVD/DVD-RW
3x7200 RPM SATA HD
Windows 7 64 bit (still deciding between Home and Professional)

It's that last line I need help with.  Looking at the Microsoft comparison, the only interesting the Professional adds to me would be the "XP Mode".  However, they seem to make it sound like this XP compatability mode is really more for business type programs.  I'd only be looking at this for any old games (C&C Generals comes to mind) that I might have problems with.  So, simple question.  Can anyone weigh in with experience and/or advice to help me pick between the two versions?  The price difference isn't extreme, but why pay for it if I don't need it?
