Title: Customize passenger height

trying to figure out how to edit the concorde as the passengers are taller than the frame of the aircraft :)

any way to change height ?

I seem to have another issue whereas the concorde does not seem to have any buttons to open/close doors except the cockpit one

It's not possible to change the passenger heights, the only thing you can do is lower the door.

The issue, at least in the 737, is not that the passengers are too tall but that they 'walk' about 40-50 cm above the floor of the aircraft, thats why their heads clip the door.
