Why is the ground texture orange at night, and why are the jet bridges pointing up?

Because it use Sodium Low pressure lamps, which cause that orange color, see real world KDFW at night:

It's not clear from your message if you are referring to jetways that are supposed to be attached to an AI. If that's the case, the problem is likely the Exits section on the AI not being correct. KDFW uses the standard FSX animation system, and we don't have any control over their animation, since it's handled by the sim, depending on the main exit of the airplane used.
