I thought the GSX trial worked with all FSDT airports. I own all of them so I thought I would use the trial awhile to make sure I want this product. In KLAS, the only option I got was to open GSX trial mode, which asked me to move to one of the 3 non FSDT airports or open up McCarren options, which has nothing to do with GSX. I even restarted FSX, updated GSX, and changed to a default FSX plain. No changes. I have used GSX at some of the FSDT airports before. What could be causing this issue?

It surely does.

Your problem is likely caused because you renamed or removed or replaced the AFCAD that comes with KLAS with another one. OR, you have another AFCAD from KLAS coming from another product on an higher level in the Scenery Library that is taking precedence of the FSDT one, and the result would be GSX wouldn't know if you have FSDT KLAS, so it won't activate itself if not purchased.
