Well if you must know...
Play your fsrecord video and pause the game just before the time you want the canopy to open. Then go to the "Tools" and open the "Explorer" in the Traffic Toolbox. Right click on the aircraft that you want the canopy to open and click "Send Key Event". Choose "Toggle Aircraft Exit" and click Ok. You can do the same for multiple aircraft. Then when your ready, unpause the game. When you do, all of the canopies that you have selected will open. Then do it all over again to close them.
It really serves no purpose other than making videos, but have fun.
