And just to clarify, I should delete the custom one I installed, and then GSX automatically uses the one supplied by iniBuilds? -because I don't know where that is located in the inibuilds folder
You don't have to know. The airplane configuration page has a RESET button precisely for that reason, so you won't have to fiddle with files and know where they are.
If you click RESET on an airplane that comes with a developer-provided profile, the Reset will remove juet the CUSTOM profile you downloaded, not the one provided by the developer. If the airplane doesn't come with a developer-provided profile, RESET will remove the custom profile so the plane will revert with what GSX is providing, which can be either an Internal profile or "nothing" if the airplane is not internally supported by GSX, so you should not Reset in this case and use a custom profile.
And, the airplane customization page will tell you exactly which data is available and which data is in use, in the top part of the window under the airplane name, it says:

- Aircraft data used by GSX:

The first group of lines will tell you ALL data available for that airplane, which can be "Internal GSX database", "Developer-provided" and "User customization"
The second line will tell you what GSX is using
now, because it's a priority system: if there's an Internal profile and a developer-provided profile, GSX will use the developer-provided profile. If there's a User custom profile, GSX will use that one with the highest priority, and so on.
