A diagnostic log should be useful, both to be sure you have the latest version, but also to check where the problem happened.
Because, in the current version, there's an automatic check that, if Simconnect ( which provides with the Navdata ) stops to respond for more than 30 seconds, Couatl will automatically restart, so you won't have to do it yourself.
The Navdata being "stuck" or stopping to reply, seems to be the cause in your case, otherwise it won't be solved by disabling it but, maybe, knowing more about when this happens, might help us adding extra workarounds to prevent it. Thing is, I think GSX is the first add-on ever using the new Navdata API, meaning some issues are to be expected.
