ok, try this:

Remove both these folders:

\Addon Manager\couatl
\Addon Manager\couatl64

then run the Live Update again, it should download several files, see if it makes any difference.

I've notice when my updater gets to the FSX/P3D part it quits.

As explained many times, if you run the Updater with the "Live Update" icon, it will quit at the end, performing only the steps for the product you actually have installed so, unless you installed everything, you'll never see all steps performed, and since at the end of the last step, there's nothing else left to do other than quit, it quits.

Report a problem only if you see actual errors.

I've tried the antivirus exclusions and deleting the couatl folders then updating, still no dice.

I'm still getting the error in the sim and these errors in my couatl.log file:
Error: exception UNRECOGNIZED_ID in call SetDataOnSimObject param #2 '-548581440'

Are you getting ONLY those ones ? If yes, they are harmless, because they have been handled without a panic. If you have other errors, if would be best if you posted the actual LOG file ZIPPED, and attached to a post.

Yes, but the sim is still narrating "Could not find valid AFCAD Data at this position" when I try to open the GSX Menu

Here is my latest couatl.log file, I'm still getting the "Could not find valid AFCAD data at this position, services are not available 6" error in the sim.

It looks like as the program is being prevented from reading the MSFS folders to search for airports. You can try adding both the Community and Official folders to the antivirus Exclusions.

That's unfortunate, try to exclude this file:

c:\Program Files (x86)\Addon Manager\couatl64\couatl64_MSFS.exe

Sure, basically all of the issues we are having were caused by that.

Hmm I found out something very interesting, I tried it on KLCT and it worked, then tried it on KORD and other airports but it doesn't work there. here is my log.
