can i disable the in Sim Update Notification?

Add-ons -> "Couatl Live Update" -> Disable.

But I STRONGLY suggest not to. It's not as if you are "forced" to do an update, you can continue using the simulator and, if you select the 3rd option "Ignore this update", you won't get any notifications until the NEXT update will be released.
