no no I want to know, after I install XP on the New 320 gig, can I see my old 250 gig when I boot up on my "My Computer" screen and access my files?

Yes!  If your BIOS sees it and the drive is formated under a FAT or NTFS you should always see it in XP.  And you will see all the OLD XP installed files on the 250GB drive.

Now, the only thing I would caution you is NOT to re-install XP again on the 320GB if you've got XP (Bootable) on the 250GB already; as you are currently using the 320GB as another addon drive (i.e. Its NOT MASTER HDD C).  The new windows XP installation will see that OLD 250GB installation and overwrite its setup in favor of this new XP installation.  If you want XP Bootable on both 250GB and 320GB independantly than remove the 250GB with existing XP first.  Reboot with 320GB as HDD C and do a fresh install.  XP does NOT do Dual-boot with another XP version and CANNOT co-exist with another XP installation without changing the installation to indicate One as Primary and the other as a repaired copy.
